Spicy Taco Skillet
This is a one pot dish and it was a hit! It’s easy and healthy. What a great combination! This dish is a perfect weeknight dish. I didn't put the red chili in since my kids were going to be eating it. I'm sure it would have added even more flavor to the dish.
A friend referred me to this new app called Kitchen Stories & it is a neat one. They have interesting new recipes to try. This is where this recipe came from.
From HHM: Ground Beef & Baby Spinach
Spicy Taco Skillet
Prep: 20 minutes
Servings: 4
Ingredients
1 lb ground beef
14 oz canned diced tomatoes
1 1/2 cups shredded cheddar cheese
1 cup baby spinach
1 yellow bell pepper (chopped)
1 green bell pepper (chopped)
1 large onion (chopped)
1 red chili
2 tbsp taco seasoning
1 tsp vegetable oil
sour cream for serving
green onions for garnish
salt

Instructions
1.) Under medium heat, brown the ground beef. Drain grease from ground beef.
2.) Add chopped onions to ground beef. Mix. Add chopped peppers to mixture. Mix. Cook 3-4 minutes until the onions & peppers start to soften.
3.) Add the taco season. Add salt & pepper to taste. Mix.
4.) Combine 1 chili to mixture.
5.) Add 1 cup spinach to the dish. Stir in well. The spinach will start to wilt slightly.
6.) Add 14 oz of tomatoes. Stir.
7.) Sprinkle 1 ½ cups of shredded cheese into pan.
8.) Allow cheese to melt. Sprinkle green onions on top of cheese.
9.) Dollop sour cream on top.
